Vegetarian Chili with Maple Chipotle Grille Sauce

Try a little to start a meal, or make it the whole meal itself! It's that good.

Ingredients:

  • 1 large sweet onion, chopped
  • 4 cloves garlic, sliced or diced
  • 1 (10-ounce) package mushrooms, sliced or chopped
  • 8 ounces carrots, sliced or chopped
  • Zucchini, summer squash, celery, etc., optional
  • 1 large (40.5-ounce) can kidney beans, drained
  • 1 (28-ounce) can diced tomatoes
  • 1 (15.5-ounce) can black beans, drained
  • 1 (15.5-ounce) can pinto beans, drained
  • Garbanzo beans, navy beans, black-eyed peas, optional
  • 1 jar Stonewall Kitchen Maple Chipotle Grille Sauce

Directions:

  1. Sauté onion until translucent; add garlic and continue cooking until soft.
  2. Add carrots, mushrooms, diced tomatoes; stir well and simmer lightly until carrots are tender.
  3. Add beans and 1-1 1/2 cups of Maple Chipotle Grille Sauce; heat through and serve hot.
  4. Top with shredded cheddar or Monterey Jack cheese, or sour cream and salsa.
