Ingredients
- 6 ounces fresh baby spinach
- 2 apples, cored and diced
- 2 oranges, peeled and sectioned
- 1/4 cup fennel bulb, shaved very thin
- 1/4 cup pecans, toasted
- 1/4 cup dried cranberries
- 1/4 cup crumbled blue cheese
- 2 Tablespoons scallions, minced
- 1/4-1/2 cup Honey Orange Balsamic Dressing (Organic) or Apple Cider Vinaigrette
Directions
- Place spinach, apples, orange sections, fennel, pecans, dried cranberries, blue cheese and scallions in a large salad bowl. Toss with enough dressing to lightly coat the salad. Serve immediately.
