A mid-day weekend brunch buffet is a wonderful way to celebrate the season with the special people in your life. With a buffet the mood is more casual and guests can leisurely fill their plates and choose to sit or mingle where they want.

These delicious recipes are easy to make and will be enjoyed by both adults and children. Best of all, when everything is ready to go you can actually relax and enjoy time with your guests.

Vegetable Frittata


  • 2 tablespoons butter
  • 2 tablespoons oil -- vegetable or olive
  • 1 russet potato, medium, peeled and sliced thinly
  • 1 leek, small, quartered, rinsed well and patted dry
  • 1 cup asparagus, blanched, cut into 1" pieces
  • 3/4 cup Swiss cheese, grated
  • 6 large eggs
  • 1/2 cup half and half or light cream
  • 1/2 cup Stonewall Kitchen Spicy Honey Mustard
  • Salt, optional


  1. Heat butter and oil in heavy skillet.
  2. Sauté thinly sliced potatoes and diced leeks together until potatoes are tender and can be pierced with a fork. Blanch asparagus until tender.
  3. Lightly oil 9x9 baking pan and put cooked vegetables into bottom of pan.
  4. Lightly beat eggs and add half and half and Spicy Honey Mustard to egg mixture. Salt optional.
  5. Add shredded Swiss cheese and pour over vegetable mixture.
  6. Bake in a pre-heated 350 degree oven for 20 to 30 minutes or until center is firm and set. Remove from oven and let stand for 10 minutes.
  7. Cut small for appetizers or cut larger for entrée portions and serve with mixed salad greens and crusty bread.

    *This recipe may also be baked in a pie shell for quiche.

Mixed Berry Fruit Salad


  • 6 cups mixed berries, such as strawberries, raspberries and blueberries
  • 1/4 cup Stonewall Kitchen Pink Grapefruit Marmalade (or one of our other marmalades)
  • 1 tablespoon fresh mint leaves, chopped


  1. Clean and hull berries. Drain well or lay on paper towels to dry.
  2. Heat marmalade slightly in a microwave or over low heat.
  3. Combine fruit, Pink Grapefruit Marmalade and mint in a medium serving bowl. Mix until uniform.
  4. Serve chilled or at room temperature.

Apple Crumb Cake

  • 2/3 cup plus 4 tablespoons canola or vegetable oil
  • 1 1/2 cup milk
  • 2 large eggs
  • 3 1/2 cups flour
  • 2 cups granulated sugar
  • 1 teaspoon salt
  • 5 teaspoons baking powder
  • 1 teaspoon Pure Vanilla or flavored extract
  • 5 large apples, cored and sliced thin

crumb topping ingredients

  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup plus 1 tablespoon flour
  • 2 cups walnuts
  • 2 teaspoons cinnamon
  • 4 ounces cold butter in pieces

syrup topping ingredients


  1. Beat together oil, milk, and eggs. Mix in dry ingredients. Gently stir in vanilla or other flavoring.
  2. Pour 1/2 of the batter into a greased 11 x 17 pan. Lay apples over the mixture to create a colorful pattern.
  3. Cover apple with a thin layer of crumb topping. Repeat with the rest of the apple slices, batter and topping. (Top layer of crumb mixture should be thick to completely cover the fruit.)
  4. Bake 375 degrees for 35-40 minutes or until golden brown and a toothpick inserted in the middle comes out clean.
  5. Combine syrup and cream in a heavy saucepan and heat, stirring.
  6. Serve cake warm or at room temperature with warm syrup topping.
