The first pumpkin "pies" made in New England are believed to have originated when the colonists cut the top off of a freshly harvested pumpkin, removed the seeds, and filled the pumpkin with milk, eggs, spices, and honey. They cleverly baked the pumpkin in hot ashes and enjoyed the creamy flavor of what has become one of our favorite pie fillings. Our version of this classic recipe is full of fresh pumpkin flavor enhanced with brown sugar, spices and just a hint of lemon. With just a couple of pantry items, this filling makes one perfect, easily made pie, ideal for the holidays or anytime at all.
