Baked Apples with Orange Cranberry Marmalade
ingredients
- 6 McIntosh or Cortland Apples
- 1 jar Stonewall Kitchen Orange Cranberry Marmalade
- 1 can pan spray
- 1 pint heavy cream
- Confectioners’ sugar, to taste
- 1 oz. grand marnier liquor
- 1 bunch fresh mint
directions
- Wash apples in cold running water
- Core apples
- Place a teaspoon of Stonewall Kitchen Orange Cranberry Marmalade in center of each apple
- Place in a shallow roasting pan with a little bit of water
- Cover pan with foil
- Bake in a 350 degree oven until fork tender
- In separate stainless steel bowl, whip heavy cream and season with sugar and grand Marnier until stiff peaks are formed
- Place a spoon full of whip cream in bottom of serving dish
- Remove apples from oven, place an apple on a pillow of whipped cream
- Garnish with a sprig of fresh mint
