Roasted Vegetable Sandwich or Dip

Ingredients:

For the Spread:
  • 1/4 cup Stonewall Kitchen Basic Pesto Aioli, Roasted Garlic Aioli or Horseradish Aioli
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon hot sauce (such as Tabasco or Cholula)
Sandwich:
  • 8 slices of seedless rye bread
  • Mesclun greens or other lettuce
  • Tomato, sliced
  • 1 1/4 pound rare roast beef

Directions:

  1. Combine all sauce ingredients and mix until uniform.
  2. Using Toast seedless rye bread.
  3. Coat one side of each slice of rye toast with roasted vegetable sandwich spread..
  4. Layer salad greens, tomato slices and roast beef. Form sandwich, cut and serve.
