  1. Preheat oven to 350 degrees F.
  2. Place chicken on a cutting board. Using a sharp knife make a pocket in each breast by slicing horizontally, making sure to not slice them completely in half.
  3. Roast poblano chile peppers on a baking sheet under the broiler or directly over the flame of a gas cooktop. Turn frequently and roast until charred on all sides and soft. Place peppers in a brown paper bag or a covered bowl until cool. Gently remove the charred skin, stem and seeds. Slice peppers into four pieces.
  4. Stuff each chicken breast with one ounce cheese and one piece roasted pepper. Secure with a toothpick. Place chicken in a baking dish and baste with Raspberry Chipotle Barbecue Sauce.
  5. Bake 40-60 minutes or until the chicken is no longer pink, the juices run clear and has an internal temperature of 165 degrees F. Baste with additional sauce frequently during the cooking process.
