Grilled Chicken Salad

A variation on the classic, this chicken salad is bright, versatile, and full of robust flavor

Ingredients:

    Chicken:
  • 2 whole chicken breasts, cut in half and pounded
  • Stonewall Kitchen Spice Rub for Chicken and Pork
    Vinaigrette:
  • 1/2 cup vinegar
  • 1/2 cup canola oil
  • 2 tablespoons sugar
  • 3 tablespoons Stonewall Kitchen Horseradish Mustard
  • salt and pepper to taste
    Salad:
  • mixed greens
  • tomatoes

Directions:

    Chicken:
  1. Sprinkle chicken with spice rub.
  2. Grill.
    Vinaigrette:
  1. Whisk vinegar, mustard and sugar together.
  2. Gradually add the oil.
  3. Salt and pepper to taste.
    Salad:
  1. Line platter with greens and tomatoes.
  2. Slice the grilled chicken and place over the greens.
  3. Top with vinaigrette.
