Bibb and Radicchio Salad

ingredients

• 1 large head Bibb lettuce, torn into small pieces
• 1 small head Radicchio

Vinaigrette:

• Juice from 1 lemon
• 6 tablespoons Stonewall Kitchen Extra Virgin Olive Oil
• 1 tablespoon Stonewall Kitchen Blue Cheese Herb Mustard
• 2 teaspoons sugar
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 3 scallions, white part only

directions

1. Combine all vinaigrette ingredients in a food processor. Process until well blended and sugar is dissolved.
2. Toss with fresh greens and serve.
