Couscous Salad with Cilantro Lime Dressing
This salad is a great complement to Stephanie Brewer's South of the Border Grilled Chicken.
- Prepare couscous according to package directions.
- Set aside until cool and then toss with Cilantro Lime Dressing, to taste.
- Add diced veggies and tomatoes to the couscous and stir.
- Refrigerate until ready to serve.
- Garnish with fresh cilantro.
