Champagne Shallot Vinaigrette

Great with salsa, sliced avocado, warm pinto beans

Ingredients:

  • 2-3 tablespoons Stonewall Kitchen Champagne Shallot Mustard
  • 2 tablespoons Champagne vinegar or your favorite
  • 1-2 teaspoons crushed garlic
  • 1 cup Stonewall Kitchen Extra Virgin Olive Oil (slowly add the oil to emulsify)

Directions:

  1. Using food processor, combine ingredients.
  2. Toss summer greens with vinaigrette.
  3. Lay on top of warm blue corn tortilla.
  4. Slice cooked chicken and add as well.
