Cooking is a passion for Nicole Galbadis, who has always been creative in life and in work. Having worked for many years in the beauty industry both as a hair stylist and a cosmetic field sales manager, her creative lifestyle has made its way into the kitchen. A married mother of two small girls. Nicole lived the last 3 years in Athens, Greece. She is of Italian descent and loves the flavors of the Mediterranean. Her family learned volumes about Greek culture and food during their time in Greece-- a small country where home grown meats and vegetables are quick to market, making the food simple yet delicious and light. Italian cuisine, by contrast, tends to be more rich and bold. Combining the two? Magic! While living in Greece, Nicole held cooking classes for the American Embassy community. She defined the 20 items that are must-haves in the kitchen and prepared assorted dishes using those foods-- fantastic, healthy dishes that anyone and everyone can make with fresh, simple ingredients that offer the most flavor. While her life overseas was thrilling, Nicole is loving being back in New England. She is ready to share her knowledge of creating great dishes!
