After graduating from the Institut d’Hôtellerie et de Tourisme du Québec, Montréal native Pierre Gignac apprenticed at the bastion of classic French cuisine, Chez La Mère Michel in Montréal. Pierre’s first chef’s position was at the Prego restaurant in Montreal; a trendy, Italian eatery favored by local celebrities, politicians and the dining elite. After extensive travels in Asia and Europe, Pierre opened his first restaurant in Ogunquit, Maine. Named 98 Provence, this southern French bistro was a preferred destination of locals, tourists and critics for 18 years until it closed in 2012. Pierre is currently executive chef at Ocean, a restaurant offering French inspired cuisine located at Cape Arundel Inn in Kennebunkport, Maine.
