When Old Man Winter comes knocking
A hearty soup, deliciously healthful.
This Stew is a tribute to Old Man Winter and the lustrous cold weather he brings home so we can once again enjoy soup like Stonewall Kitchen Beef Barley Stew. Full of good for you and tasty ingredients; pearled barley, green lentils, carrots, shitake mushrooms, and leeks. Did you know: barley is high in fiber and has been shown to help reduce cholesterol?
Pearled barley, green lentils, carrot, shitake mushroom, leek, onion, hungarian paprika, ground bay leaf, thyme.
You will need: 2 Tbsp. butter, 2 lbs. beef stew meat, cut into 1-inch (or smaller) pieces, 1 cup onion, chopped, 8 cups beef broth, freshly ground pepper (to taste), 2 cups potatoes, peeled and diced « inch.
In a six-quart pot, melt butter and saut‚ beef in batches until brown on all sides. Add onion when browning the last batch of beef. Return all browned beef to the pot and add beef broth. Bring to a simmer. Cover and simmer 1 « - 2 hours until beef is fork tender. Add contents of soup mix, pepper and potatoes. Cover and simmer 45 minutes. If adding red or white wine, add after last batch of beef. Stir to deglaze the pan.
Optional: Drop your favorite biscuit dough on top of the stew to make dumplings. Cover and cook for 15 minutes.
Be sure and read all the ingredients you will have to supply yourself. I used sirloin instead of tough stew meat. It was not budget, prep or time friendly. The thyme was overwhelming.In my opinion the thyme masked the taste of all the vegetables and grains.I would not waste my "thyme" on this stew.
