Going to the Chapel?
The "marriage" of exceptional ingredients, a classic Italian soup.
We like the idea that Italian Wedding Soup conjures up visions of a big family gathering adorned with lots of smiling faces, though the actual name of this soup comes from the Italian soup: minestra maritata, translated to "married soup", referencing the perfect pairing of green vegetables and meat. Stonewall Kitchen Wedding Soup Mix is indeed a perfect marriage of ingredients and ready for you to serve in a jiffy before going to the chapel or an away-game.
Ingredients:
Acini di pepe pasta, onion, carrots, celery, whole grain bread crumbs, parsley, garlic, pepper blend, herbs and spices. Pasta contains semolina (wheat) flour.
Directions:
You will need: 12 oz. turkey Italian sausage, 1 extra large egg white, beaten, 1 medium onion, chopped, 1 « Tbsp. olive oil, 8 cups chicken broth, 3-4 cups chopped escarole.
Remove and discard casings from turkey sausage. Add breadcrumbs/ herb mixture and egg white into ground turkey. Form small meatballs by hand, 50-70. Set aside in the refrigerator. In a large stockpot, saut‚ onion in oil for 2 minutes. Stir in contents of the larger soup seasoning packet, about 30 seconds. Add broth and bring to a boil. Add meatballs and simmer 20 minutes, covered. Bring to a boil; add pasta and escarole. Reduce heat to a simmer, cover and cook 10 minutes.
