Contrary to popular belief, this soup is not actually wedding related but references the translation of its Italian name, minestra maritata or "married soup" - the perfect pairing of vegetables, herbs, spices and meat. Acini di pepe pasta, onion, carrots, celery, whole grain bread crumbs, parsley, garlic, pepper blend, herbs and spices. Pasta contains semolina (wheat) flour.


You will need: 12 oz. turkey Italian sausage, 1 extra large egg white, beaten, 1 medium onion, chopped, 1 1/2 Tbsp. olive oil, 8 cups chicken broth, 3-4 cups chopped escarole.

Remove and discard casings from turkey sausage. Add breadcrumbs/ herb mixture and egg white into ground turkey. Form small meatballs by hand, 50-70. Set aside in the refrigerator. In a large stockpot, saute onion in oil for 2 minutes. Stir in contents of the larger soup seasoning packet, about 30 seconds. Add broth and bring to a boil. Add meatballs and simmer 20 minutes, covered. Bring to a boil; add pasta and escarole. Reduce heat to a simmer, cover and cook 10 minutes.

Made this today and it was delicious. I'm not a fan of turkey so I used a all natural italian sausage removed the casing and followed the directions. I definitely will order this again on my next order. I loved it.
