Karl’s culinary education began with Texas influenced family picnics that showcased his grandmother’s fried chicken, stewed green beans with ham hocks and mashed potatoes with milk gravy. With a solid foundation and appreciation for handcrafted American food, Karl moved to Maine after college and discovered a flourishing food scene in Portland. After receiving a classic French kitchen education from David Grant at Portland’s Aubergine Restaurant, Karl followed his culinary interests to Hugo’s where he eventually worked his way up to Sous Chef. Shortly thereafter, Karl married his wife, Hilary and they headed to Chicago where Karl honed his culinary education as Chef de Partie in the three star rated Alinea Restaurant. Two years later the Deubens moved back to Maine where Karl began cooking at Miyake Restaurant in its original Spring St. location. Working with toaster ovens out of a glorified closet, he helped Masa Miyake create a unique and much loved dining experience. When not working, Karl enjoys spending time outdoors with his wife and two sons. Bill Leavy is a New York City native who turned to the culinary industry post 9/11 to pursue a more satisfying career. After settling in Portland, Maine and while working as a Pastry Chef under Chef Rob Evans at Hugo’s, Bill not only met his future wife, Janet, but he also started working with his future business partner, Karl Deuben. After Hugo’s, Bill worked at The Back Bay Grill and helped open Pai Men Miyake where he was reunited with Karl. Their shared love for food led them to open Small Axe Food Truck in 2012. At Small Axe Food Truck, they were able to translate their appreciation for local ingredients into delicious, hand-crafted, casual food. The success of Small Axe Food Truck inspired East Ender Restaurant and Bar and their unique vision for casual dining. East Ender Restaurant and Bar was named one of America’s Best New Restaurants in 2015 by Bon Appetit Magazine.
