The word "Santoku" refers to three virtues and can be used to cut vegetables, fish and meat. It also alludes to the knife's versatility. Closely related to the Chef's Knife, this blade is thinner and tapered to give it maximum precision when slicing or chopping. The hollows on each side of the knife reduce drag and prevent items from sticking to it.
