There is something about grocery shopping outdoors and purchasing truly just-picked vegetables and fruits straight from the source. Unfortunately, getting to the afternoon market is not always feasible. We bring you the best of the market in our Stonewall Kitchen Farmers' Market Vegetable Soup. Packed with vegetables for a quick and hearty meal any time of the year.
Brown Rice, Onions, Carrots, Peppers, Peas, Beans, Zucchini, Celery, Pasta(Enriched Semolina Flour) and Herbs. NO Salt, MSG or Preservatives. Nutrition Information based on dry mix only.
You will need: 2 Tbsp. olive oil, 1 Tbsp. butter, 2-3 cloves garlic, diced Vegetable Soup mixture: 8 cups chicken or vegetable broth, 4-6 cups water, Optional: Leftover turkey thigh or leg, Pasta packet: 1 - 10 oz. box frozen or fresh sugar snap peas, 1 Tbsp. lemon juice.
In a 4 quart pot, saut‚ garlic in oil and butter on low heat for 1 minute. Add vegetable soup mixture and toss lightly. Add broth and water (and turkey, if desired). Bring to boil, reduce heat and simmer covered for 45 minutes. (Simmer 30 minutes longer with turkey). Add pasta and simmer uncovered for 10 minutes. Add lemon juice and peas. Turn off heat and leave uncovered for 10 more minutes before serving.
I love all the Stonewall soups, great flavor and texture. The ingredients in the soup are not mushy and tastes homemade. Lots of veggies!
