Keep Old Man Winter at bay
It's easy to warm up to our deliciously hearty and healthy Beef Barley Stew. Loaded with tasty and wholesome ingredients like pearled barley, green lentils, carrots, shitake mushrooms, leeks and seasonings, it has all the makings of a truly flavorful dish. All you need to do is saute your favorite stew meat and add a few common pantry items to enjoy this truly satisfying winter warmer.
Pearled barley, green lentils, carrot, shitake mushroom, leek, onion, hungarian paprika, ground bay leaf, thyme.
You will need: 2 Tbsp. butter, 2 lbs. beef stew meat, cut into 1-inch (or smaller) pieces, 1 cup onion, chopped, 8 cups beef broth, freshly ground pepper (to taste), 2 cups potatoes, peeled and diced « inch.
In a six-quart pot, melt butter and saut‚ beef in batches until brown on all sides. Add onion when browning the last batch of beef. Return all browned beef to the pot and add beef broth. Bring to a simmer. Cover and simmer 1 « - 2 hours until beef is fork tender. Add contents of soup mix, pepper and potatoes. Cover and simmer 45 minutes. If adding red or white wine, add after last batch of beef. Stir to deglaze the pan.
Optional: Drop your favorite biscuit dough on top of the stew to make dumplings. Cover and cook for 15 minutes.
