1 red bell pepper, seeded and cut into 1-inch squares
1 medium red onion, peeled and cut into 8 wedges
1 cup 1-inch pineapple cubes
Directions
Trim fat from pork. Cut into 1 1/2-inch cubes. Marinate pork in 1/2 cup Raspberry Chipotle Barbecue Sauce at least 2 hours up to overnight.
Thread pork, vegetables and pineapple alternately on pre-soaked wooden or metal skewers.
Grill over medium-high heat for 10-15 minutes, or until the meat is cooked through. Turn skewers and baste often with fresh sauce during cooking process.
