New England fall in a bowl
Deliciously simple and hearty ingredients.
Stonewall Kitchen's hearty New England Chicken Stew conjures up visions of a cold fall evening, when the days seem to be getting shorter and the leaves on the trees a bit less. Made from hearty, all natural ingredients including white beans, potato, onions, carrots and peas this soup will warm your heart and soul.
Ingredients:
Dehydrated white beans, potato, onion, carrot, peas, celery, yellow pepper, thyme, sage.
Directions:
You will need: 4 Tbsp. butter, 1 cup onion chopped, ¬ cup flour, 6 cups chicken broth, 2 cups cooked chicken, cut up, freshly ground pepper.
In a four quart pot, melt butter and saut‚ onion for five minutes. Add flour and stir continuously for 30 seconds. Stir in broth, raise heat, and bring to a simmer. Add contents of soup mix. Bring to a simmer again, cover and cook 30 minutes. Add cooked chicken, cover and cook 15 minutes. Serve with biscuits. Optional additions: Drop your favorite biscuit dough on top of the stew to make dumplings. Cover and cook for 15 minutes.
I made this stew on a cool, rainy August night. It was easy to prepare, smelled GREAT as it cooked, and all 3 kids ate it up! I served it with warm wheat sour dough bread. Pure bliss!
