Add 1/3 cup of gourmet popcorn kernels and 2 Tbsp oil to a 3-qt. saucepan or popper. Cover and cook on medium heat. Crack the lid to release steam and shake the pan regularly to distribute heat. When popping begins to slow, remove from heat and season as desired.
Add 1/4 cup of gourmet popcorn kernels to a small paper bag. Fold the top of the paper bag down twice and place in your microwave. Microwave on high for 2–3 minutes or until the popping slows to 1 or 2 pops per second to avoid burning. Remove carefully, spray with oil or add melted butter and season as desired.
