Preparation & Instructions

Lemon Fig Shortbread Squares

    For the crust:
  • 8 Tbsp. unsalted butter, softened
  • 1 tsp. water
  • For the filling:
  • 3 medium eggs, room temperature
  • ⅓ cup water, lukewarm

Directions for crust: Preheat oven to 350℉. Line an 8-inch square pan with parchment paper, allowing it to overhang the edges. Spray lightly with cooking spray. In the bowl of an electric mixer, cream softened butter with a ½ cup of the crust mix. Beat at medium speed until light. Slowly add remaining crust mix and 1 tsp. water. Beat on low speed just to incorporate. Gather dough into a ball. With floured hands, pat the dough into the prepared pan. Bake for 20 – 23 minutes or until lightly browned on the edges. Remove from oven and cool on a rack. (Do not turn off oven.)

Directions for filling: Beat the eggs and water in a mixing bowl. Add the filling mix and beat on high for about 1 minute. Pour onto cooled crust and place back in oven. Bake 25 – 27 minutes, until the filling is set in the center. Remove from oven and allow to completely cool on a rack. Sprinkle with desired amount of the contents from the sugar packet. Cut into 2-inch squares.
