  1. Dry pork chops with paper towels and allow to come to room temperature on the countertop for 20 minutes before cooking.
  2. Stir together melted butter and seasoning.
  3. Heat oven to 350°.
  4. Heat a cast iron (or other heavy duty, oven-safe) skillet over medium-high heat.
  5. Add pork chops and allow to sear, untouched, on the first side for 5-7 minutes until dark golden brown before flipping.
  6. Flip chops and pour seasoned butter on top and around skillet. Add fresh herbs to skillet.
  7. Use an oven mitt to carefully tilt skillet to one side and use a spoon to gather melted butter and spoon over the chops again and again. Repeat for 3-4 minutes or until second side is nicely browned.
  8. Transfer skillet to preheated oven and bake 10-15 minutes or until pork chops are firm to the touch and an internal thermometer reaches 165°.
  9. Remove from oven and allow to rest 10 minutes before serving.
