Ingredients

  • 2, 15.5oz cans black beans, rinsed and divided
  • ¾ cup Chipotle Ranch Dressing
  • 1 egg, slightly beaten
  • 1 ½ cups panko bread crumbs
  • 1 cup Monterey jack cheese, shredded
  • ¼ cup red onion, grated
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 Tablespoon fresh squeezed lime juice
  • 1 Tablespoon honey
  • 1 Tablespoon Olive Oil

Directions

  1. In a food processor, combine 1 cup black beans and ¼ cup Chipotle Ranch Dressing.  Puree until a smooth paste is created.
  2. In a separate bowl, combine remaining black beans, remaining Chipotle ranch dressing, egg, bread crumbs, cheese, onion, salt, pepper, lime juice and honey.  Add pureed black bean mixture and mix until well combined and you are able to form a ball.
  3. Create 4-6 patties and place in the refrigerator to chill for a minimum of 30 minutes.  Meanwhile, preheat oven to 375°F.
  4. Heat a non-stick skillet over medium-high heat and add olive oil (split olive oil if you are searing patties in batches).  Add patties and sear each side for 3-5 minutes, until edges are crisp.  Move the patties to a baking sheet and bake for 15 minutes, flipping once half way through.  Serve with additional Chipotle Ranch Dressing if desired.
