Summer Veggie Salad with Grilled Fish

Directions

Ingredients

  • 2 6-8 ounce portions flaky white fish (sea bass, halibut, tilapia all work well.)
  • 2-3 Tbsp Urban Accents Peppery Citrus Everything Seafood Rub
  • 1 small to medium yellow squash (spiralized or very thinly sliced or shaved lengthwise)
  • 1 small to medium zucchini (spiralized spiralized or very thinly sliced or shaved lengthwise)
  • 1 handful arugula or mixed baby greens
  • 1/2 bunch asparagus (trimmed and thinly sliced on diagonal)
  • Juice of one lemon
  • 3 Tbsp olive oil (divided)

Directions

  1. Heat grill and oil grates. Season fish on all sides with 1-2 Tbsp seasoning. Grill filets over indirect heat for 4-6 minutes on the two largest sides or until opaque, firm, and flaky.
  2. Combine vegetables and greens in a large bowl.
  3. Stir or whisk together lemon juice, olive oil, and 1 Tbsp seasoning. Drizzle over veggies and toss to coat.
  4. Serve fish on a bed of seasoned veggies.
