Fill a cocktail shaker with ice. Add gin or vodka, jalapeño simple syrup, brine, lime juice and bitters. Shake vigorously and strain into a coupe glass. Garnish with jalapeño slices and cocktail onions.
*For the Jalapeño Simple Syrup;
Combine 1 cup granulated sugar, ½ cup water and 1 jalapeño (destemmed and cut in half) in a small saucepan. Bring to a boil and simmer until sugar has melted. Turn heat off and allow it to steep for 10 minutes. Cool completely before using in cocktails.
