  • 12 oz. semisweet chocolate
  • 8 tbsp. unsalted butter
  • 2⁄3 cup heavy cream

Recipe used to make Bûche de Noël

  1. Melt chocolate and butter in the top of a double boiler set over simmering water over medium-low heat, whisking often. Remove from heat and gradually whisk in cream. Transfer to a medium bowl and set aside at room temperature, stirring occasionally, until icing thickens, about 4 hours. (Don't refrigerate; it makes icing hard to spread.)
