Orange Glazed Cranberry Bread

Directions

Ingredients

    Streusel:

  • 1/4 cup all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3 Tablespoons unsalted butter, cold
  • Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped cranberries, fresh or frozen (do not thaw)
  • 1/2 cup chopped pecans (optional)
  • 1 large egg, at room temperature
  • 1/2 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 cup buttermilk
  • 1/3 cup neutral oil (canola, grapeseed or even coconut oil will work!)
  • 1 teaspoon vanilla extract
  • 2 Tablespoons orange zest
  • Glaze:

  • 1 cup confectioners' sugar
  • 1-2 Tablespoons orange juice
  • 2 Tablespoons orange zest

 

Directions

  1. Preheat oven to 350°F. Spray a 9x5 loaf pan with nonstick spray.

    Begin by making the streusel:

  2. Combine the flour, sugar, and cinnamon together in a clean bowl until you have achieved pea-size crumbs. Set aside.
  3. To make the bread:

  4. Toss the flour, baking soda, salt, cranberries, and pecans together in a large bowl. Set aside. In a medium bowl, whisk the egg, brown sugar, and granulated sugar together until combined.
  5. Whisk in the buttermilk, oil, vanilla, and orange zest. Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Do not overmix.
  6. Pour the batter into prepared loaf pan. Top evenly streusel, pressing the streusel down gently into the top of the bread so it sticks.
  7. Bake the bread for 45 minutes to 1 hour. Test the cake for doneness by sticking the center of the bread with a toothpick. If it comes out clean, the bread is done. Allow bread to cool completely in the pan on a wire rack.
  8. To make the glaze:

  9. Whisk the confectioners' sugar and orange juice together in a small bowl. Add more orange juice depending how thick you want the glaze. Whisk in orange zest and drizzle over cooled bread.
