Ingredients

For the Salmon (follow package directions):

For the Peach Salsa:

  • 2 large peaches, pits removed and roughly chopped
  • 1 medium cucumber, cleaned and roughly chopped
  • 1 small jalapeno pepper, seeded and finely chopped
  • ½ cup fresh mint, dill, and/or cilantro, roughly chopped
  • ½ red onion, thinly sliced (try pickled red onion for an extra zing!)
  • ¼ cup fresh lime juice

For the Creamy Avocado Lime Sauce:

  • 1 cup greek yogurt
  • ½ large avocado
  • 1 handful cilantro leaves
  • ¼ cup fresh lime juice (add more to taste after blending)
  • ¼ tsp salt and pepper (add more to taste after blending)

Directions

  1. Preheat oven to 450°F.
  2. Generously coat salmon with rub on all sides and bake on a baking sheet 10-15 minutes or until fish is firm and opaque in the middle. Remove from oven and serve with salsa and sauce.
  3. Stir all salsa ingredients together and refrigerate until ready to use. Can be made up to one day in advance.
  4. Blend all sauce ingredients in a blender until smooth. Taste and add salt or lime juice to your liking.
