For the Salmon (follow package directions):
For the Peach Salsa:
- 2 large peaches, pits removed and roughly chopped
- 1 medium cucumber, cleaned and roughly chopped
- 1 small jalapeno pepper, seeded and finely chopped
- ½ cup fresh mint, dill, and/or cilantro, roughly chopped
- ½ red onion, thinly sliced (try pickled red onion for an extra zing!)
- ¼ cup fresh lime juice
For the Creamy Avocado Lime Sauce:
- 1 cup greek yogurt
- ½ large avocado
- 1 handful cilantro leaves
- ¼ cup fresh lime juice (add more to taste after blending)
- ¼ tsp salt and pepper (add more to taste after blending)
