Cucumber Dill Dressing

Ingredients

  • 2 cups cucumber, sliced
  • 1 cup snow peas, trimmed
  • 1/4 cup radish, sliced thinly
  • 8 ounces butter lettuce, washed and picked
  • 1 (12 ounce) jar quartered artichoke hearts
  • 1/2 cup Stonewall Kitchen Cucumber Dill Dressing
  • 1 cup ripe avocado, sliced
  • 2 Tablespoons fresh mint, picked
  • 2 Tablespoons fresh dill, picked
  • Salt and pepper

Directions

  1. Place the cucumber, snow peas, radishes, lettuce and artichoke hearts in a large bowl.  Add dressing and carefully fold together to combine.
  2. Divide into four bowls and finish each salad with avocado slices, mint and dill. Season with salt and pepper to taste and serve right away.
