Drain the chickpeas and rinse. Place them on a paper towel lined baking sheet. Top with an additional papertowel and dry the chickpeas as much as possibly by gently pressing down and rolling them around. Remove any of the outer skin that falls off in this process.
Place the onion, garlic, chickpeas and oats in the bowl of a food processor. Pulse until all is combined and it creates a course grain. Add the feta spread and pulse again until the mixture begins to form a ball. Add the fresh parsley, salt and pepper and pulse to combine.
Remove from the bowl and place in the refrigerator to cool at least one hour (do not skip this step! It allows the burgers to form together and not crumble).
When ready, remove from refrigerator and form into 4 patties of even thickness. Heat 2 Tablespoons of oil in a skillet over medium-low heat and fry each side until browned, about 3-4 minutes. When done, remove and place on a paper towel lined sheet. If doing in 2 batches, repeat by adding additional oil and frying the remaining patties.
Add to your favorite bun and top with your favorite toppings – including additional Mediterranean Feta Spread!
