Preparation & Instructions

New England Corn Chowder

  • 2-3 white potatoes
  • 6 cups chicken broth
  • 2 cups heavy cream
  • Optional: When fresh corn is available, cut the kernels off ears and set aside. Add the cobs to the broth with the potatoes and continue with the recipe. Remove cobs and add the fresh corn with the cream.

Peel and dice potatoes and place in a 4-quart pot. Add chicken broth and bring to a boil. Add contents of soup mix and simmer covered for 45 minutes. Add cream and heat uncovered on low until thickened, about 30 minutes. Add additional chicken broth or cream to desired thickness. Garnish with grated cheese and crumbled bacon, if desired. Add clams, crab, chicken or fresh corn for a versatile dinner in any season.

Makes eight 8-oz servings.
