1 small to medium yellow squash (spiralized or very thinly sliced or shaved lengthwise)
1 small to medium zucchini (spiralized spiralized or very thinly sliced or shaved lengthwise)
1 handful arugula or mixed baby greens
1/2 bunch asparagus (trimmed and thinly sliced on diagonal)
Juice of one lemon
3 Tbsp olive oil (divided)
Directions
Heat grill and oil grates. Season fish on all sides with 1-2 Tbsp seasoning. Grill filets over indirect heat for 4-6 minutes on the two largest sides or until opaque, firm, and flaky.
Combine vegetables and greens in a large bowl.
Stir or whisk together lemon juice, olive oil, and 1 Tbsp seasoning. Drizzle over veggies and toss to coat.
