Ingredients
- 2 cups cucumber, sliced
- 1 cup snow peas, trimmed
- ¼ cup radish, sliced thinly
- 8 ounces butter lettuce, washed and picked
- 1 (12 ounce) jar quartered artichoke hearts
- ½ cup Creamy Avocado Cilantro Dressing
- 1 cup ripe avocado, sliced
- 2 Tablespoons fresh mint, picked
- 2 Tablespoons fresh dill, picked
- Salt and pepper
Directions
- Place the cucumber, snow peas, radishes, lettuce, and artichoke hearts in a large bowl. Add dressing and carefully fold together to combine.
- Divide into four bowls and finish each salad with avocado slices, mint, and dill. Season with salt and pepper to taste and serve right away.
