Preparation & Instructions

Farmers’ Market Vegetable Soup

  • 6 cups vegetable or chicken broth
  • 1 cup water
  • 1 tsp. salt
  • 1 tsp. minced fresh garlic
  • 1 Tbsp. fresh lemon juice, optional
  • 1 (10 oz.) box frozen or fresh sugar snap peas

In a 4-quart pot, bring broth and water to a simmer. Add salt, garlic, and contents of soup mix. Bring back to a simmer for 30 minutes. Add pasta and lemon juice, simmer 10 minutes. Add sugar snap peas and simmer for 3 minutes. Turn off heat and serve.

Makes nine 8-oz servings.
