Ingredients
- 2 cups seedless watermelon, cubed (appx 1/4 medium watermelon)
- 2 cups nectarine, pitted & diced (appx 2 nectarines)
- 2 cups cherry tomatoes, halved (appx 1/2 pint)
- 3-5 ounces feta cheese, crumbled
- 1/4 cup pistachios, shelled and roughly chopped (optional)
- 1 Tbsp Urban Accents Sonoma Pepper Spice Blend
- 3 Tbsp Napa Valley Naturals Grand Reserve Balsamic Vinegar
- fresh mint and/or basil leaves
Directions
- Toss watermelon, nectarines, tomatoes, and feta in a large bowl.
- When ready to serve, top with pistachios and fresh herbs. Shower with seasoning and generously drizzle with balsamic vinegar.
